Mixed Pepper Pipérade

Serves 4

Ingredients:
1. 2 tbsp Olive Oil
2. 1 Onion – chopped (preferably Red Onion)
3. 1 Red Pepper – sliced
4. 1 Green Pepper – sliced
5. 4 tomatoes – pelled & chopped
6. 1 clove of garlic – crushed
7. 2 eggs – beaten
8. 1 tbsp water
9. Ground Black Pepper
10. Wholemeal toast or bread

You will need:
Bowl, chopping knife & board, whisk or fork

Method:
Place items 1,2,3,4 in a bowl
Cover and microwave on full power for 5-6 minutes stirring halfway through.
Add items 5,6 and 9.
Cover again and cook on full power for 6 minutes stirring half way through until the mixture becomes pulpy.
Pour items 7 (egg) and 8 over the mixture and microwave on full power for 4-4.5 minutes. Stir twice during cooking until Pipérade is the consistency of lightly scrambled egg.
Serve immediately on toast or a bread of your choice.

Smoked Mackerel with Mexican Mathilda Sauce

Serves 4

Ingredients:
1. 4 smoked mackerel fillets
2. 1 cup light mayo
3. 2 tbsp tomato ketchup
4. 0.5 diced red pepper
5. 0.5 diced green pepper
6. 1 shot Tabasco
7. 0.5 cup grated cheddar cheese
8. 1 tsp dried mixed herbs

You will need:
Chopping knife and board, grill rack or microwaveable plate, grater

Method:
Place item 1 on a grill rack or microwaveable plate.
Combine items 2,3,4,5,6,7 and 8 together in a bowl to form a thick cold sauce.
Spread the mixture on top of the mackerel fillets.
Grill in microwave / grill combi oven until sauce bubbles and changes to an orange colour.
Serve on a bed of salad leaves with fresh lemon, cherry tomatoes and garlic bread.

Stilton Burgers

Serves 4

Ingredients:
1. 4 cups of minced beef
2. 1 onion – finely chopped
3. 1 celery stick – finely chopped
4. 1 tsp dried mixed herbs
5. 1 tsp mustard
6. 0.5 cup stilton cheese – crumbled
7. 4 burger buns
8. Salt and pepper to season

You will need:
Mixing bowl, chopping knife & board, microwaveable plate

Method:
Mix items 1, 2 and 3 in a bowl and season well with salt and pepper.
Stir in items 4 and 5 and form the mixture together.
Divide the mixture into eight equal portions on a chopping board and flatten out slightly into patties.
Share the cheese out between 4 of the patties placing it on top in the centre. Place the four remaining patties on top and mould into a burger shape.
Place the 4 burgers on a microwaveable plate and cook uncovered for 6-7 minutes, turning over once.
Leave to stand for 2-3 minutes.
Check to see if the burger is cooked through (with no raw juices coming out).
Serve in a burger bun with salad and a relish of your choice.

Stuffed Chicken with Honey and Grain Mustard

Serves 4

Ingredients:
1. 4 chicken breasts
2. 4 sausages (skinned)
3. 1 lemon
4. 1 tbsp grain mustard
5. 1 tbsp honey
6. Raspberry vinaigrette

You will need:
Cling film, grater, microwaveable plate

Method:
Lay the chicken breasts (1) out on the cling film and place a second layer of film on top. Beat the chicken flat using the cling film roll.
Remove the top layer of film and press out the sausage meat (2) on top of the chicken breasts.
Grate a little lemon zest (3) on top.
Fold the chicken breast over to cover the filling.
Roll tightly into a roulade, still wrapped in the cling film.
Cook on full power for 8 minutes.
Check with a knife or skewer to make sure there are no raw juices coming out.
Leave to cool for a few minutes.
Carefully remove the cling film and smother the breasts with grain mustard (4) and honey (5).
Grill until golden brown.
Serve hot or cold on a bed of salad leaves with raspberry vinaigrette (6)

4.5 Minute Sponge

Serves 4

Ingredients:
1. 1 cup caster sugar
2. 1 cup soft margarine
3. 2 eggs (small)
4. 1 cup self raising flour
5. Items for flavour and filling

You will need:
Mixing bowl, whisk or fork, microwaveable bowl, cling film

Method:
Place items 1 and 2 in a bowl. Mix together and add item 3.
Whisk or beat well (don’t worry if it looks like it has curdled – the cooking will correct this).
Add item 3 and fold in until it is all combined.
Add your flavour / fruit etc as required.
Pour into a greased bowl and cover with a double layer of cling film.
Cook in the microwave for 4.5 minutes – serve immediately with cream or sauce.
